Sugar

Craved by soldiers, and issued either in its raw form or after it had been refined and whitened, sugar was used heavily in coffee or tea. When supplies of cane sugar ran low, soldiers from Ohio to New England asked for cans of maple syrup or blocks of maple sugar in their letters home.

Salt Pork

“Sowbelly” was perhaps the most common meat issued to Northern soldiers, though they also frequently ate fresh beef or chickens foraged from local farms. To prevent spoilage, salt pork barrels were filled with brine or lard. Soldiers often boiled the meat to temper the overpowering salty flavor. On the march, pork was roasted quickly over a fire at the end of a bayonet or fried in a plate or canteen half. Occasionally, soldiers engaged in “pig hunts” as they marched through the Southern countryside; in late 1862, William McCarter of 116th Pennsylvania Infantry captured a 40-pound piglet, dispatched it with his bayonet, and carried it away in his gum blanket.
